Springtime Spinach Salad (Microwave)

Ingredients
  • 2 slices bacon

  • 1 small onion sliced

  • 2 T. sugar

  • 3 T. vinegar

  • 2 T. water

  • 1 t. sesame seed

  • 1/2 t. salt

  • dash pepper

  • 8 cups torn fresh spinach leaves

  • 1 cup alfalfa sprouts

Directions
  1. Microwave (high) bacon in paper towel-covered 2 cup glass dish 2 to 2 1/2 minutes or until bacon is crisp. Set aside bacon; discard all but 1 Tablespoon drippings. Add onion.

  2. Microwave (high) uncovered 1 to 1 1/2 miutes or until onion is softened. Stir in sugar, vinegar, water, sesame seed salt and pepper; set aside.

  3. Combine spinach and sprouts in a large salad bowl; toss lightly. Crumble bacon into salad.

  4. Microwave (high) dressing mixture, uncovered, 60 to75 seconds or until hot; stir to dissolve sugar. pour over greens and toss lightly.

  5. About 6 servings.

Tips:
Other vegetables such as sliced radishes, cauliflower or mushrooms can be added with the greens.
If desired, omit bacon and cook onion in 1 tablespoon cooking oil. About 1/2 tablespoon bacon bits can be added to salad before serving.
