1 tsp margarine
1 large red bell pepper, chopped
1/4 cup chopped onion
1 garlic clove, minced
2 Tbsp water or chicken broth
1/4 tsp dried thyme
dash hot pepper sauce
1 1 lb. fish fillets (sole, Haddock or flounder)
Melt margarine in medium sauce pan over medium high heat. Add bell pepper, onion and garlic; cook and stir until crisp-tender, about 5 minutes. Stir in water , thyme, salt, and hot pepper sauce. Simmer 10 to 15 minutes until most of liquid is absorbed and vegetables are soft. Transfer vegetable mixture to food blender container; process until smooth. Keep warm.

To serve, spoon warm sauce over fillets. 4 servings.
