Fish Fillets with Red Pepper Sauce

Ingredients
  • 1 tsp margarine

  • 1 large red bell pepper, chopped

  • 1/4 cup chopped onion

  • 1 garlic clove, minced

  • 2 Tbsp water or chicken broth

  • 1/4 tsp dried thyme

  • dash salt

  • dash hot pepper sauce

  • 1 1 lb. fish fillets (sole, Haddock or flounder)

Directions
  1. Melt margarine in medium sauce pan over medium high heat. Add bell pepper, onion and garlic; cook and stir until crisp-tender, about 5 minutes. Stir in water , thyme, salt, and hot pepper sauce. Simmer 10 to 15 minutes until most of liquid is absorbed and vegetables are soft. Transfer vegetable mixture to food blender container; process until smooth. Keep warm.

  2. Broil fish fillets 4 to 6 inches from heat for 8 to 12 minutes until fish flakes easy with a fork.

  3. To serve, spoon warm sauce over fillets. 4 servings.
