MEDITERRANEAN SALAD

Ingredients
  • What You Need:

  • • 8 roma (plum) tomatoes, diced

  • • 5 Persian cucumbers, diced

  • • 1/2 cup peeled, chopped jicama

  • • 1/2 cup canned garbanzo beans, drained

  • • 1 small yellow bell pepper, diced

  • • 1/2 cup red onion, diced

  • • ½ cup lemon juice

  • • 3 tablespoons virgin olive oil

  • • 1/3 cup fresh parsley and or cilantro, finely choped

  • • salt and pepper to taste

Directions
  1. How To Prepare:

  2. 1.In a large bowl, toss together the tomatoes, cucumber, jicama, garbanzo beans, bell pepper, and red onion. Add the lemon juice, olive oil, and parsley, and mix thoroughly to coat. Season with salt and pepper. Serve cold, or at room temperature.

  3. Serve this salad topped with grilled fish or chicken.
