2 Tilapia filets, rinsed and seasoned with sea salt, pepper and a small amt. of tarragon, or other favorite spice.
1T olive oil
1/4c. yellow onion, chopped fine
1 clove garlic (may use 2 if you like), chopped fine
1/2c. carrots, chopped fine
1/2c. celery, chopped fine
1/2c. green bell pepper chopped fine
1/4c. any white button, or other mushroom, sliced(optional)
1c. basmati, jasmine, white or brown rice cooked according to pkg. directions.
In a wok or large pan, saute garlic and onion until tender, do not allow to brown, or garlic will be bitter
add carrots, celery and pepper, saute until begining to become tender,
add mushrooms(if using)
saute another 60 seconds or so until vegetables are just about soft,
lay tilapia filets on top of veggie mixture, steam 1-2 mins, or until tilapia is cooked.
Serve over 1/2c of rice
