Custard Tarts

  • 1 cup flour

  • 1/3 cup unsalted margarine

  • 4 Tablespoons unsweetened apple juice

  • 3/4 cup sugar-free applesauce

  • 1/2 cup whole milk

  • 2 eggs

  • 1/2 teaspoons cinnamon

  • 1 apple, sliced and cored

  1. Preheat oven to 425 degrees. In a medium-sized bowl, combine the flour and margarine. Add enough fruit juice to form a soft dough. Knead well. Pinch off small pieces and press into nonstick tart pans or small muffin tin wells. Set aside. In a blender, place the applesauce, milk, eggs and cinnamon. Blend well. Fill each tart 3/4 full. Sprinkle tops with cinnamon. Bake at 425 degrees for 10 minutes. Then reduce heat to 350 degrees. Continue baking another 20 to 25 minutes. Place on wire rack to cool. Refrigerate 1 hour. When ready to serve, place one apple slice on top of each tart.
