Avocado Pie

Ingredients
  • Pie Crust:

  • 3/4 fat-free graham cracker crumbs

  • 3/4 teaspoon sugar substitute

  • 4 egg whites

  • Filling:

  • 1/4 cup hot water

  • 1 package Knox gelatin

  • 2 medium sized avocados

  • 1 can condensed milk

  • 2 Tablespoons lemon juice

  • 1 cup diet whipped topping

Directions
  1. Pie Crust:

  2. Place graham cracker crumbs, sugar substitute, and egg whites in a blender. Process until the mixture is moist and crumbly. Place mixture in an 8" pie pan. Press mixture into the bottom of the pan and up to the sides.

  3. Filling:

  4. In a small bowl, place the hot water and Knox gelatin. Set aside. Place the avocados, condensed milk, lemon juice, and Knox gelatin mixture in a blender. Blend until well mixed. Pour into pie crust. Spread the dairy topping over the top. Refrigerate for 2 hours.

  5. YIELDS 8 WEDGES.
