Peanut Butter Balls

Ingredients
  • 3 cups shredded coconut

  • 1/2 cup dietetic peanut butter (smooth or crunchy)

  • 1 teaspoon vanilla extract

  • 2 cups shredded coconut

Directions
  1. Combine 3 cups coconut with peanut butter and vanilla extract. Mix well. Shape into 1" diameter balls. Roll balls in the 2 cups shredded coconut. Coat thoroughly. Place in pan lined with waxed paper. Chill thoroughly.

  2. YIELDS 80 PIECES.
