Chocolate Peanut Butter Fudge

Ingredients
  • 2 cups finely chopped carob

  • 1/8 teaspoon artificial sweetener

  • 2/3 cup plain cold mashed potatoes

  • 1/2 cup dietetic peanut butter (crunchy works best)

  • 1/8 teaspoon salt substitute

Directions
  1. Melt carob and sweetener in double boiler. Set aside. Mix together mashed potatoes, peanut butter and salt substitute. Add mixture to melted carob. Pour into a 9" by 9" square pan. Spread evenly. Cool until set. Cut into 1" squares, 1/2" deep.

  2. YIELDS 90 PIECES.
