Peanut Butter-Potato Pinwheels

Ingredients
  • 1/2 cup plain cold mashed potatoes

  • 1/8 teaspoon salt or salt substitute

  • 4 cups powdered Isomalt

  • 1/2 teaspoon vanilla extract

  • 1 cup dietetic peanut butter

Directions
  1. To potatoes, add salt or salt substitute and 1 cup powdered Isomalt. Beat well. Add vanilla and turn half of mixture onto board that has been llightly dusted with Isomalt. Roll into a rectangle 1/4" thick. Spread with half of the peanut butter. Roll up from short side, jelly roll fashion, to 1" diameter. Repeat with remaining mixture. Chill for atleast 2 hours. Slice 1/4" thick.
