3/4 cup water
1 envelope unflavored gelatin
1 pkg. (8oz) cream cheese
1/4 cup sugar
1 can (6oz) frozen lemonade concentrate
3/4 cup milk
1 t. grated fresh lemon peel
2 cups sliced fresh or frozen strawberries
Sprinkle gelatin over water in 2 cup glass measure. Let stand a few minutes to soften.
Microwave (high), uncovered 1 1/2 to 2 minutes or until steaming hot. Stir to dissolve gelatin. Set aside.
Microwave (high) cream cheese in uncovered 1 qt glass pan 45 to 60 seconds or until softened.
Stir until creamy. Blend in sugar. Add lemonade concentrate to hot gelatin mixture; stir until melted. Slowly blend mixture into cream cheese. Mix in milk and lemon peel. Refrigerate 1 to 2 hours or until slightly thickened. Stir in strawberries. Pour into 6 cup mold. Refrigerate at least 4 hours or until set. Unmold onto lettuce leaves for serving.
