Tangy Strawberry Mold (MICROWAVE)

  • 3/4 cup water

  • 1 envelope unflavored gelatin

  • 1 pkg. (8oz) cream cheese

  • 1/4 cup sugar

  • 1 can (6oz) frozen lemonade concentrate

  • 3/4 cup milk

  • 1 t. grated fresh lemon peel

  • 2 cups sliced fresh or frozen strawberries

  1. Sprinkle gelatin over water in 2 cup glass measure. Let stand a few minutes to soften.

  2. Microwave (high), uncovered 1 1/2 to 2 minutes or until steaming hot. Stir to dissolve gelatin. Set aside.

  3. Microwave (high) cream cheese in uncovered 1 qt glass pan 45 to 60 seconds or until softened.

  4. Stir until creamy. Blend in sugar. Add lemonade concentrate to hot gelatin mixture; stir until melted. Slowly blend mixture into cream cheese. Mix in milk and lemon peel. Refrigerate 1 to 2 hours or until slightly thickened. Stir in strawberries. Pour into 6 cup mold. Refrigerate at least 4 hours or until set. Unmold onto lettuce leaves for serving.

Whole raspberries can be substituted for the strawberries.
Plain yogurt can be substituted for the milk.
Mixture can be poured into 8-inch square pan. When set cut into squares.
