9-inch pastry shell
1 1/2 cups chopped fresh broccoli
2 T. chopped onion
1 can (4 1/2 oz) tiny shrimp, drained and rinsed
1 cup (4 oz) shredded Swiss cheese
1/2 cup (2oz) shredded cheddar cheese
1 can (12oz) evaporated milk
3 eggs, beaten
1/4 t. salt
3 drops hot pepper sauce
Prepare pastry shell in 8-inch round microwave quiche or baking dish. Prick bottom and sides with fork.
Microwave (high), uncovered, 5-6 minutes or until no longer doughy, rotating dish once or twice. Set aside. Combine broccoli and onion in a 2 qt. glass dish; cover with plastic wrap that is vented.
Microwave (high) 2 1/2 to 3 minutes or until broccoli is tender crisp, stirring once. Drain. Mix in shrimp, cheeses, milk, beaten eggs. salt and pepper sauce.
Pour mixture into pastry shell.
Microwave (high) uncovered, 8 to 8 1/2 minutes or until edges begin to set, rotating once. Then Microwave (medium-50%) 7 to 8 minutes or until center is set. Let stand about 5 minutes before cutting into wedges for serving.
