Coconut Delight

Ingredients
  • 3 cups shredded coconut

  • 3 large egg whites, lightly beaten

  • 2 teaspoons rum extract

  • 4 cups carob

  • 1/8 teaspoon artificial sweetener

Directions
  1. Mix 2 cups coconut and lightly beaten egg whites. Add rum extract. Shape into 1" diameter balls. Place on cookie sheet. Preheat oven to 350 degrees. Bake for 20 to 25 minutes. Balls will be lightly brown. While they are still warm, reshape any that lost their roundness while baking. Cool. Melt carob with sweetener in double boiler. Dip balls in carob. Place on waxed paper to cool. When cool enough to handle, roll in remaining coconut. Place in fridge to set.
