Citrus Candy

  • 2 cups orange, lemon, lime, or grapefruit rind, cut in 1inch square pieces

  • 6 cups cold water

  • 1/8 teaspoon artificial sweetener

  • 1 cup powdered Isomalt

  1. Wash rinds well. Cut away inner white skin. Put rind, water, and sweetener in a 2 quart saucepan. Bring to a boil. Cook until water and sweetener are completely absorbed by rind. Remove from pan and place the cooked rind on waxed paper to cool and dry. Roll pieces in powdered Isomalt. Return coated pieces to waxed paper. Let dry for appr. 24 hours. Wrap individual pieces in plastic wrap. Store in fridge or freezer.
