Minted Strawberry Soup from

  • 16oz frozen unsweetened strawberries , partially thawed

  • 1 1/4cup orange juice

  • 1oz fresh mint

  • 1tbsp sugar

  • 1/4cup sour cream

  • 1/4cup fresh sliced strawberries (optional)

  • 7mint sprigs (optional)

  1. In a blender or food processor, combine frozen strawberries, orange juice, fresh mint, and sugar. Process until smooth.

  2. Transfer mixture into large bowl.

  3. Add sour cream. Stir with whisk until blended.

  4. Serve immediately, or cover and chill up to 8 hours.

  5. To serve, ladle soup into individual bowls. Garnish with strawberry slices and mint sprigs.
