Cauliflower "Mac and Cheese"

Combine the cheesy flavors of mac and cheese minus the carbs!

Ingredients
  • 1Cauliflower, head, medium, 5" - 6", fresh

  • 3tbsp unsalted butter , cut into pieces

  • 1tbsp mayonnaise

  • 1tbsp yellow mustard

  • 1/2cup grated Parmesan cheese

Directions
  1. Preheat oven to 350°F.

  2. Steam whole head of cauliflower for 15 to 20 minutes.

  3. Drain and place on a pie plate.

  4. In mixing bowl, combine mayonnaise and mustard. Place cauliflower in souffle dish and spread the mixture over it. Dot with pats of butter.

  5. Sprinkle generously with Parmesan cheese.

  6. Bake uncovered, for about 15 minutes, or until the cheese is brown.

  7. Additional Information

  8. Cheddar or any good melting cheese may be used in place of Parmesan.

This is yummy—I cut the caulifllower into bite-size pieces and stirred the sauce into the pieces. Baked in a dish and everyone ate it up! Thanks!

For those who don't realize all the Nutrition Facts are listed next to the recipe. I guess because this is low carbs it is listed here because saturated fat is 7 g & sodium is 296.5mg anytime cheese is an ingredient we are going to see high fats and sodium. Any meal is healthier when you replace carbs with good veggies.
