Lemon Parslied Potatoes (MICROWAVE)

  • 1 lb. new potatoes, scrubbed

  • 2 T. margarine or butter

  • 1 T. lemon juice

  • 1/4 t. salt

  • dash hot pepper sauce

  • 1 t. snipped fresh parsley

  1. Pare 1-inch strip around center of each potato. Place in 1-quart microwave-safe casserole. Add margarine. Cover casserole with lid.

  2. Microwave (high) 7 to 8 minutes or until just tender, rearranging once. Add lemon juice, salt and pepper sauce; mix lightly. Cover and let stand a few minutes before serving. Sprinkle with parsley before serving.
