1/4 cup packed brown sugar, can use diabetic brown sugar (splenda,etc.)
1/4 cup chili sauce
3 Tbsp mayonnaise or salad dressing, can use low-fat
1 lb. ground ham (about 4 cups)
2 eggs, beaten can use egg beaters
1/3 cup rolled oats
1/4 cup milk
2 Tbsp finely chopped onion
1/8 tsp pepper
Combine brown sugar, chili sauce, and mayonaise in a small microwave dish; mix well.
Microwave (high) uncovered 1 1/2 to 2 minutes or until mixture boils and flavors are blended, stirring once. Set aside.
Combine ham, eggs, oats, milk, onion, and pepper in a mixing bowl; mix well. Press into ungreased 9 X 5 inch microwave safe loaf dish. Spoon about half of sauce over loaf, spreading to coat evenly. Cover with wax paper.
Microwave (high) 9 to 10 minutes or until center is set, rotating dish once. Let stand 5 minutes. Remove to serving plate. Spoon remaining sauce over loaf; slice for serving.
