Crispy Oven Fried Chicken

  • No Stick Cooking Spray

  • 1 1/2 cups cornflakes cereal crushed

  • 1 teaspoon paprika

  • 1/2 teaspoon garlic powder

  • 1/2 teaspoon oregano leaves

  • 1/4 teaspoon cayenne pepper

  • 1 egg white

  • 2-3 pound whole chicken cut up, take skin off for lower fat

  1. Heat oven to 400*, spray pan with cooking spray. In a paper or plastic bag, combine creals, papricka, garlic powder, oregano and cayenne. Place egg white in small bowl beat slightly. Dip chicken in egg white place in cereal mixture, place on pan.

  2. Bake for 45 minutes or until juices run clear.

  3. ENJOY!!!

@danciinglady- I make this every time in a Corningware baking pan with no problem. @everyone- try a little smoked paprika or curry powder, and lots of black pepper! (To me garlic or onion powder is cheating, but I guess one could say that about curry powder as well!) Egg whites are unnecessary.

Need to be careful of the sugar grams in ANY cereal, but it sounds wonderful and I agree with kirkwood…marinate it in buttermilk, but try it overnight in the fridge, it makes the chicken sooooooo tender!

I make this all the time..but I water instead of egg or egg whites. I also will use a small amount of bread crumbs (rye or wheat - homemade and chopped in a blender) with garlic powder and a little seasoning salt. I turn the chicken after 20 minutes.

Does not work in a glass pan - must be a metal pan - untreated pan - not a non-stick…that gunks up the pan.

I have been wanting to try it except I have regular corn flakes and, I don't want to throw them in the trash, I feel that their are children in the world that have nothing to eat… aghh..
