By Jeanette Terry

Garden-fresh veggies are basted with seasoned olive oil and grilled till they are tender.

Marinated Grilled Vegetables
Ingredients
  • 6 small onions, halved

  • 4 medium carrots, cut into 1-1/2-inch chunks

  • 1/3 cup olive oil

  • 1/2 teaspoon dried rosemary, crushed

  • 1/4 teaspoon dried marjoram

  • Dash pepper

  • 6 pattypan or sunburst squash

  • 1 medium zucchini, cut into 1-inch chunks

  • 1 medium green pepper, cut into 1-inch pieces

  • 1 medium sweet red pepper, cut into 1-inch pieces

Directions
  1. In a large saucepan, cook onions and carrots in water for 10 minutes or until tender; drain. In a large bowl, combine oil and seasonings. Add the vegetables; stir to coat. Cover and refrigerate for at least 1 hour.

  2. Drain, reserving marinade. Place vegetables on a grill rack or thread vegetables alternately onto skewers. Cover and grill over medium heat for 15-20 minutes or until tender. Turn and baste with reserved marinade three times.

Love this recipient!

Icemeister. Sunburst squash is that sort of flatish yellow scalloped edge squash…sort of looks like a sunburst…

I would try this with Nutiva Organic Extra Virgin Coconut Oil. It has become my oil of choice because it has the Non-GMO Project Verified icon and the USDA Organic icon on the container. Non-hydrogenated, Zero Trans Fats, and No Hexane.
The following paragraph is also on the container:
America Needs an Oil Change
A diet that consists of a 3:1 ratio of Omega-6 to Omega-3 is a good balance versus the average American diet, which consists of approximately 15:1 or more. So avoid out-of-balance soy, corn, and canola oils with their trans fats, oxidation, and GMOs. Cook with coconut oil, olive oil, and hemp oil for the perfect 3:1 Omega ratio.

I microwave full garlic bulbs as well and then toss them on the BBQ at the same time as the rest. Turns the corms into creamy garlic. When they are nice and soft, squeeze them over the veggies and flip them in covering the veggies with a little. It's delicious. My friends love it.

Instead of olive oil, use rice bran oil or grapeseed oil, both have higher smoke points, and a lighter taste. They also don't absorb into the food as much so they are lower in calories

what is pattypan or sunburst squash? Heard of a lot of squash but not those - are they specific to a organic store or a "whole foods"? Where can they be found?

Now, marinate in EVOO with 2 or 3 cloves of crushed garlic, and grill! Yummier still!
