  • 1 lb. lean ground chicken breast (or you can use ground turkey)

  • 3 oz. fat-free crumbled feta cheese

  • 4 large olives, minced

  • 1 tsp dried oregano

  • 1/4 tsp black pepper

  • 4 cloves of garlic

  • 1 egg

  • 1 1/4 cups fat-free greek-style yogurt

  • 1 medium cucumber peeled, seeded, and finely chopped

  • 1 tbsp fresh mint, minced, or 1 tsp dried mint

  • Juice of 1 lemon

  • 1/8 tsp white pepper

  1. In a large bowl, combine chicken, feta, olives, oregano, black pepper, and 1 minced clove of garlic; blend well.

  2. In a small bowl, gently beat egg with a whisk or fork; add to chicken mixture, blend thoroughly and set aside.

  3. In a medium bowl, mix yogurt, cucumber, remaining garlic, mint, lemon juice, salt and white pepper; stir to blend; refrigerate.

  4. Coat grill with non-stick cooking spray and heat over medium-high heat. Form chicken mixture into 4 burgers; place on grill pan; grill 5 to 7 minutes per side, or until cooked through and firm in center.

  5. Remove burgers to platter and place on top of mint leaves or lettuce. Top each burger with 2 tablespoons of cucumber yogurt.

The feta is high in sodium…just eliminate it and add a bit more tzatziki sauce. (yogurt) definitely yummy!
