Cauliflower cheese casserole

  • whole head Cauliflower or frozen 2 cups, chopped 1 inch flowets

  • 1 cup shredded chedder cheese

  • 4 tbsp of lowfat mayo

  • 1 tsp salt

  1. Cook cauliflower in 1inch of water with salt. Steam until tender, about 10 mins on medium high heat.

  2. Stir together cheese and mayo. .

  3. Drain Cauliflower and place in a casserole dish.

  4. Spread cheese mixer over top of Cauliflower.

  5. Bake in a 350 degree oven for about 20 mins. Until cheese is melted and slightly browned.

  6. Serving 4 - half cup

this sounds great, can't wait to try it! the sodium is really high though, that isn't something i usually pay a ton of attention to. i looked at the ingredients in my fridge (mayo, cheese) and i wasn't sure how it would add up to that much. even considering the salt added in, a serving is one fourth of the total sodium for the meal. i thought maybe it was an error, until i checked the sodium in the salt—HOLY MOLEY! i then redid the calculation, using my lite salt instead and the total with the cheese and the mayo was lower than how much was in the regular salt alone! good lesson.

i love cauliflower, and this sounds great, but the sodium ammount scares the heck out of me—i'll consider it with a low sodium cheese and no additional salt, but half a lemon on the cauliflower.
