Chopped Salad with Blue Cheese Dressing

  • Salad

  • 8 cups chopped romaine lettuce

  • 1 medium cucumber, peeled, seeded and chopped

  • 3 plum tomatoes, seeded & diced

  • 2 ribs celery, thinly sliced

  • 8 radishes, trimmed and thinly sliced

  • 1 medium green bell pepper, seeded and diced

  • 1 medium carrot, peeled and diced

  • Dressing

  • 1/3 cup buttermilk

  • 1/2 ounce crumbled blue cheese

  • 1 tablespoon light mayonnaise

  • 1 tablespoon balsamic vinegar

  • 1 teaspoon Worcestershire sauce

  • 1/2 teaspoon freshly ground pepper

  1. Combine the lettuce, cucumber, tomato, celery, radishes, bell pepper, and carrot in a large salad bowl. Lightly toss.

  2. In a small bowl, whisk together dressing ingredients. Drizzle over salad and toss lightly to coat.

  3. Serve immediately or store up to one day. If you are going to take this salad to an event, keep dressing separate until ready to serve.

  4. For a little variation, you can garnish with 2 Tablespoons of bacon bits.
