Corned Beef & Cabbage Casserole (Microwave)

  • 6 cups shredded cabbage

  • 3 medium carrots, shredded

  • 3 green oinions, sliced

  • 1/4 cup chopped green pepper

  • 1 pkg. (8oz.) sliced lean corned beef, cut into thin strips

  • 1/2 cup plain non-fat plain yogurt

  • 1/2 cup (2oz.) shredded swiss cheese

  • 1/4 teaspoon caraway seed

  1. Combine cabbage, carrots, green pepper, green onions and corned beef in a 2 Qt. microwave safe casserole. Cover with casserole lid.

  2. Microwave (high) 12 to 13 minutes or until cabbage is tender-crisp, stirring twice. Stir in yogurt, cheese, and caraway seed until well mixed. cover.

  3. Microwave (high) 3 to 4 minutes or until heated through.

OMG im so glad I told my husband i wanted that cabbage the other day its in the nuker now.I'll just have to have vanilla yogurt in the morning with my granola mix just dont tell him I took his raisins ok.

Its quick and easy. You still could make it if you want to. I won't tell that it's not St. Pat's Day.
