Sirloin Citrus Salad (Microwave)

  • 1 lb. boneless beef top sirloin steak

  • 1 teaspoon grated orange peel

  • 2 Tablespoons orange juice

  • 2 Tablespoons red wine vinegar

  • 1 Tablespoon olive oil

  • 2 teaspoons honey

  • 1 teaspoon dijon mustard

  • 1/4 cup walnut pieces

  • 1/4 teaspoon vegetable oil

  • Soy sauce

  • 4 cups torn romaine lettuce

  • 2 oranges, peeled and separated into segments

  • 1 cup sliced strawberries

  1. Trim all fat from meat; cut meat into 1/8 inch thick strips about 2 inches long. Place in a plastic bag. Combine orange peel, juice, vinegar, olive oil, honey and mustard in a 1 cup measure; mix well with a fork. Add about 1 tablespoon mixture to meat (set aside remainder); mix lightly to coat meat. Close bag and refrigerate 30 minutes. Meanwhile combine walnuts and vegetable oil in glass dish.

  2. Microwave (high) uncovered 2 to 3 minutes or until lightly toasted, stirring twice. Cool and set aside. Drain meat and place in a dish. Brush lightly with soy sauce. cover with a paper towel.

  3. Microwave (medium-high 70%) 4 to 4 1/2 minutes or until no longer pink, stirring twice. Cool slightly.

  4. Combine lettuce, oranges, meat and walnuts. Drizzle with orange juice mixture. Toss to coat evenly. Garnish with Strawberries.
