All-American Barbecued Beans (Diabetic)

Ingredients
  • 1 slice bacon

  • 1/2 cup chopped onion

  • 1/2 cup ketchup

  • 2 tablespoons white vinegar

  • 2 tablespoons water

  • 1 teaspoon prepared mustard

  • 1 teaspoon Worcestershire sauce

  • 1/8 teaspoon salt

  • 1/8 teaspoon freshly ground black pepper

  • 1 (15 1/2-ounce) can Great Northern beans, drained

  • 2 1/2 teaspoons Equal® for Recipes or 8 packets Equal® sweetener or 1/3 cup Equal® Spoonful™

Directions
  1. Cut bacon into 1-inch pieces; cook in medium saucepan over medium-high heat 3 to 4 minutes.

  2. Add onion and cook until bacon is crisp and onion is tender, stirring occasionally.

  3. Combine ketchup, vinegar, water, mustard, Worcestershire sauce, salt, and pepper; add to bacon mixture.

  4. Stir in beans. Reduce heat and simmer, covered until flavors are blended, 15 to 20 minutes. Stir in Equal®.

  5. Microwave Directions:

  6. Cut bacon into 1-inch pieces and place in 1 1/2-quart microwavable casserole. Cook uncovered at HIGH 1 minute.

  7. Add onion and cook at HIGH 2 1/2 to 3 minutes, stirring once.

  8. Combine ketchup, vinegar, water, mustard, Worcestershire sauce, salt and pepper; add to bacon mixture.

  9. Stir in beans and cover with lid or plastic wrap.

  10. Cover and cook at HIGH 4 minutes, then cook at medium 8 to 10 minutes or until flavors are blended, stirring twice.

  11. Stir in Equal®.

This looks very good to me. I eat a lot of beans because they are good at satisying my hunger and my blood glucose loves them!!Thanks for sharing..
