Broccoli Soup

Ingredients
  • 1 cup of vegetable stock

  • 3 cups chopped broccoli (about 1/2 large bunch)

  • 1 clove of garlic,minced

  • 2 tsp grated ginger root

  • 1 cup soy or skim milk

  • 1 tsp iow-sodium soy sauce1/4 cup finely chpped red onion.

Directions
  1. In a large saucepan,bring the vegetable broth to boil.

  2. Add the chopped broccoli ,garlic and ginger. Reduce the heat to low and cover. Steam for about 5 mins. or until the broccoli is tender. Remove from the heat.

  3. After the broccoli has cooled slightly,puree in a food processor or blender. Return it to the saucepan.

  4. Add the Soy or Skim milk and soy sauce. Warm over low heat.\

  5. Serve sprinkled with chopped red onion.

I had never used ginger this way until I ried the soup. It is interesting how a recipe can change with the addition of one ingredient.

this recipe sounds great.. we are looking for crock pot recipes for our winter soups.. my husband and i both love broccholi… thanks for sharing..

THIS IS ONE WE WILL HAVE TO TRY. I'VE NEVER MADE BROCCOLI WITH SOY SAUCE OR GINGER BEFORE. WILL LET YOU KNOW HOW WE LIKED IT.

There is an article on site about what broccoli can do for diabetics. I have vowed to eat it on a regular basis, in all ways.
