Peanut Butter Bars

  • Crust:

  • 1 pkg. yellow cake mix

  • 1 cup peanut butter

  • 1/2 cup milk

  • Topping:

  • 1 (6oz.) pkg. (1 cup) semi-sweet chocolate chips

  • 1 cup peanut butter chips

  • 1/2 cup chopped peanuts

  1. Heat oven to 350 degrees.

  2. Grease a 15x10x1-inch baking pan.

  3. In a medium bowl, combine crust ingredients; stir by hand until blended. Press in bottom of prepared pan.

  4. Bake at 350 degrees for 15 - 20 minutes or until set.

  5. Sprinkle with both cups of chips; let stand 5 minutes. Using a metal spatula, swirl softened chips over bars; sprinkle with peanuts.

  6. Cool completely; cut into bars. Bars can be refrigerated if necessary to set chocolate. Makes 36 bars.

It only has 18g per bar, of carbohydrates. This meant to be a snack.
It's not meant to sit down and eat the whole thing.
This is for a group gathering to share.

This does make 36 bars, so you could make, it cut into bars, wrap and freeze to eat for a time later on.

Most diabetics have between 30 and 45 grams of carbs per meal, so if you are eating a meal less than this you could have this as a dessert.

Looks yummy, but I cannot see how this would be diabetes friendly. Sugar, white flour in quantities too high. An occasional splurge, maybe.

It might. Look at both boxes in your supermarket. That should let you know if sugar-free has less carbs.

Would using the Pillsbury sugar free cake mix cut the carbs any in this recipe?
They also have sugar free chocolate cake and brownie mixes.

Peanut butter is my favorite.

Quick note to others out there, there was a recall of Skippy peanut butter, so if you have this brand please check to see if yours was recalled.
