Focaccia-style Flax Bread (low carb)

  • 1/3 cup of of oil

  • 1/2 cup of water

  • 1/2 tsp. of salt

  • 1 tablespoon of agava nectar, coconut sugar or stevia (pick one)

  • 5 eggs beaten together well

  • 2 cups of flax seed meal

  • 1 tablespoon of baking powder

  1. Preheat oven the oven to 350 degrees F

  2. In a large bowl, pour the flax seed meal, the artificial sweetener, the salt, and the baking powder and mix well.

  3. Now add the oil, the water and the eggs and mix those together well. Add the wet to dry ingredients and mix well. The eggs should be well combined wit the other ingredients. Let this set for two to three minutes to thicken. Any longer and it will be too thick to spread.

  4. Use a silicon mat on a baking tray or you can use oiled parchment paper instead. And pour the batter into the pan, once you have it all there, you can spread this out on your pan to whatever thickness you desire, but it should be at least a 1/2 inch thick.

  5. 5.Put this into the oven at 350 degrees for about twenty minutes. And you can pull it out and you just want to push on the bread and if it bounces back a bit it is done. Finally let this cool for about twenty minutes, and then take a spatula or knife and cut the bread as you like. A 10X15 pan with sides works best.
