Greens with Hot Bacon Dressing

  • Hot Bacon Dressing:

  • 6 slices of bacon

  • 1/2 cup chopped onion

  • 1 teaspoon cornstarch

  • 1/2 cup canned beef consomme

  • 1/3 cup white wine vinegsr

  • 2 teaspoons sugar

  • 1/4 teaspoon salt

  • 1/8 teaspoon pepper

  • Greens:

  • 4 cups torn spinach

  • 4 cubs torn Bibb lettuce

  1. Cook bacon in medium skillet over medium heat until crisp. Remove from skillet; crumble and drain on a paper towel. Reserve 2 tablespoons bacon drippings in skillet. Add onion, cook and stir until tender.

  2. In a small bowl, combine cornstarch, consomme, vinegar, sugar, salt and pepper; blend well. Add mixture to skillet. Cook over medium heat until slightly thickened, stirring constantly.

  3. In a large serving bowl, combine spinach and lettuce. Pour hot dressing over greens; toss lightly.

  4. Garnish with crumbled bacon. Serve immediately.

  5. Makes 8 (1/2 cup) servings.
