Crisp Tater-Dipped Vegetables

  • 1 cup mashed potato flakes

  • 1/3 cup grated parmasan cheese

  • 1/4 teaspoon celery salt

  • 1/8 teaspoon garlic salt

  • 1/4 cup margarine, melted

  • 3 egg whites

  • 4 cups assorted raw vegetables, rinsed and cut into bite size pieces

  1. Heat oven to 400 degrees. In a small bowl, combine potato flakes, parmasan cheese, celery and garlic salts, and margarine.

  2. In a second bowl, beat eggwhites with a fork until foamy. Dip vegetables in beaten egg whites; coat with potato flake mixture.

  3. Place on ungreased cookie sheets. Bake at 400 degrees for 15 - 20 minutes until lightly browned. Serve immediately.

  4. Makes 4 cups; serving size 1/2 cup.
