Haddock Chowder

Ingredients
  • 2 1/2 cups water

  • 1/2 cup chopped carrot

  • 1/2 cup chopped onion

  • 3/4 pound Haddock, cubed

  • 1/2 teaspoon salt

  • 1/2 teaspoon summer savory, crushed

  • 1/4 teaspoon white pepper

  • 1 1/2 cups potato flakes

  • 1 (12 ounce) can evaporated skim milk

Directions
  1. In a large saucepan, combine water, carrot, and onion. Bring to a boil; reduce heat. Cover; simmer 10 minutes.

  2. Stir in fish, salt, summer savory and pepper; simmer 8 to 10 minutes or until fish flakes easily with a fork.

  3. Stir in potato flakes and milk, cooking until slightly thickened and thoroughly heated.
