Ginger-Pineapple Spritzer

It’s fun, fizzy and refreshing – and so easy to make!

Ginger-Pineapple Spritzer
Ingredients
  • 4 cup(s) pineapple juice, unsweetened

  • 1 tablespoon ginger, crystallized

  • ice cubes

  • 2 cup(s) water, carbonated

  • pineapple

Directions
  1. In a pitcher, combine pineapple juice and ginger.

  2. Cover and chill for at least 2 hours or up to 24 hours.

  3. Strain juice mixture, discarding ginger.

  4. For each serving, pour pineapple juice into a tall glass over ice, filling each glass about three-fourths full.

  5. Add enough carbonated water to each glass to fill.

  6. If desired, garnish with skewered fresh pineapple.

I would only use the ginger but not crystallized with sugar and certainly not pineapple juice!! There's 100 sugar grams in the 4 cups of pineapple unsweetened juice and that is WAY too much in my diabetic life. I don't think this is an appropriate recipe to "reduce neuropathy" anything.

I thi8nk this sounds kind of good. Wonder if you could add something a little different than carbonwater? Maybe a slush with crushed ice?
