Crustless Lemon cream Pie

  • 2 packages (4-serving size each) sugar free lemon gelatin

  • 2 cups boiling water

  • 1 cup ice cubes

  • 2 cups frozen light whipped topping, thawed

  1. Ina large bowl, dissolve the gelatin in the boiling water; add the ice cubes and stir until melted.

  2. Add the whipped topping; mix until thoroughly combined. Pour into a 9-inch deepdish pie plate.

  3. Cover and chill for at least 3 hours or until set.

  4. Special Note: You can make this with whatever flavor of gelatin you like.

You can also add a package of sugar free vanilla pudding to the gelatin mixture before adding the sugar free whipped topping. I've been making this all summer and it is wonderful!
