Sausage and Cheese Breakfast Cups

Sausage and Cheese Breakfast Cups
Ingredients
  • 4 oz. Turkey sausage or crumbled Turkey bacon

  • 1/2 green bell pepper, chopped

  • 1/4 onion, chopped

  • 5 large eggs

  • 1 can (12oz) sliced mushrooms, drained

  • 1/2 cup (2oz.) shredded reduced-fat cheddar cheese

Directions
  1. Preheat the oven to 350 degrees. Coat a 6 cup non-stick muffin pan with cooking spray or line with paper baking cups.

  2. In a medium non-stick skillet over medium-high heat, cook the sausage, pepper, and onion for 5 minutes, or until the sausage is no longer pink.

  3. Spoon the mixture into a bowl and cool slightly.

  4. Stir in the eggs and mushrooms.

  5. Evenly divide the mixture into the prepared muffin cups. Sprinkle with cheese.

  6. Bake for 20 minutes, or until the egg is set.

I like this recipeā€¦but I will exchange the mushrooms for another vegetable when I try it. I will let you know how it turns out.

RuthMarie: I'm sure you can do it, but I would not freeze longer than a month or two.

You could possibly freeze this, I've never tried that. Are you talking to freeze before baking or to freeze after baking?

You can put into a 12 cup muffin pan, just fill the remaining spots with a little water so as not to burn them.

This looks really good and easy. Does anyone know if it freezes well? Can you divide it into twelve servings (i do not have a 6 muffin pan)?
