Chicken Salad

Ingredients
  • 3/4 cup fat-free sour cream

  • 3 scallions, minced

  • 1 Tablespoon finely chopped parsley

  • 1/2 teaspoon grated lemom peel

  • salt & pepper (to taste)

  • 3 cups shredded cooked chicken breast

  • 8 large lettuce leaves

Directions
  1. In a medium bowl, combine the sour cream, scallions, parsley, lemon peel, and the salt and pepper.

  2. Toss well to blend. Add chicken and toss to coat.

  3. Serve on a bed of lettuce leaves.
