Red White And Blueberry Cake

  • 1 box (18.25 oz) Pillsbury white cake mix

  • (Water, oil and Land O Lakes egg whites called for on cake mix box)

  • 1 box (4-serving size) Jell-O strawberry-flavored gelatin

  • 1 cup boiling water

  • ½ cup cold water


  • 1 cup Crisco shortening

  • 1 1/2 tsp. McCormick vanilla

  • 1/2 tsp. McCormick almond extract

  • 4 3/4 c. sifted powdered sugar

  • 4 tbsp. milk

  • 7 med. Strawberries (fresh)

  • 1/2 c. blueberries (fresh)

  1. • 1. Heat oven to 350°F. Make cake mix as directed on box for 13x9-inch pan, using water, oil and egg whites. Cool completely in pan on cooling rack 1 hour.

  2. • 2. Pierce cooled cake with fork at 1/2-inch intervals. In medium bowl, stir gelatin and boiling water until dissolved. Stir in cold water. Carefully pour mixture over entire surface of cake. Refrigerate at least 3 hours until serving time.

  3. • 3. Mix shortening, vanilla, and almond extract. Add powdered sugar and milk. Mix until spreadable consistency. Frost cake.

  4. • 4. Garnish top with blueberries and strawberries

Why not try sugar free pudding on top, instead of frosting. Thats a lot of useless carbs and not so heart healthy, using Crisco. Just a suggestion. I think it would work with vanilla pudding and berries on top.
