Saturday Skillet Breakfast

Who doesn't love a mix of turkey bacon, eggs, and potatoes? This recipe is great for lazy Saturday mornings and all the mornings in between.

Saturday Skillet Breakfast
  • 12 slices Turkey bacon, cut into 1/2 inch pieces

  • 1 medium potato, cut into small cubes

  • 2 green onions, thinly sliced

  • 1/2 tsp. chili powder

  • 1 carton 8 oz. frozen, thawed or refrigerated cholesterol-free egg product, beaten

  1. Place turkey bacon and potato in non-stick skillet. Cook on medium heat 12 minutes or until potatoes are fork-tender, stirring frequently.

  2. Stir in onions and chili powder. Pour egg product evenly over mixture; cover. Reduce heat to low and cook 5 minutes or until mixture is set. Cut into 4 wedges.

try low sodium bacon instead of turkey bacon no telling what is in turkey"bacon" regular bacon has less carbs(read labels) also I would use real eggs(4)(egg sub again have more carbs) other than that sounds good.

Hello Randomorbit3, great job on your blood sugar levels dropping! I love your suggestions because I really need to get my blood sugar levels down as well. Do you have any sample meal plans? That is my biggest challenge along to put meal plans together with the stress level. Thank you for any advice.

I have type 2 diabetes and my Doctor has told me I can eat anything in moderation. Moderation is the key word here. So if I have real bacon this morning then for the rest of the day eat food with little or no salt etc. Use common sense and if eating something that I should not have then eat a smaller portion. My blood sugar has dropped to low 90's in AM (fasting) and before bed around 140. Used to be over 220 at bedtime. I use to be on insulin (60 units a day - Levemir) and for the past 6 months none. The only thing I have done is use a smaller plate and have 4 small meals a day. Doctor is HAPPY and now so am I. Oh by the way my Doctor allows me to have a cookie at bedtime as a treat. So I have a Milino Double Dark Chocolate for my treat. Everything else in my world is the same. So have a heart to heart with your Doctor. I also have found that stress about having diabetes was the one major hurdle I had to over come. And I have :) Hope this helps some of you all. May you have a wonderful Christmas.

Use ground turkey instead of turkey bacon. Add cumin, sage and paprika to the ground turkey to make your own sausage and add a salt substitute to taste.

WOW it sounds good BUT it has 640 mg sodium so I guess I can't eat that since I also have high blood pressure.

At my grocery (Kroger) there is their store brand bacon which is a lower sodium and no sugar in the processing of the bacon. I use that instead of turkey bacon, much better taste and is lower in sodium than the turkey bacon. And I use the egg whites in the carton and add other items for flavor, like grape tomatoes, green onion, parsley, etc. Makes a great omelet!
