Coconutty Bars

  • 1/2 c butter

  • 1/2 c Splenda brown sugar blend(packed, divided)

  • 1 c flour

  • 2 large eggs

  • 1 t vanilla

  • 2 T flour

  • 1/2 t baking powder

  • 1 1/2 c coconut

  • 1 c chopped pecans

  1. Preheat over to 350. Combine butter, 1/4 c brown sugar & flour until a dough forms. Press into a 13x9" baking pan. Bake in preheated oven 10 min. Blend eggs, remaining 1/4 c brown sugar, vanilla, flour and baking powder. Stir in coconut and pecans. Spread filling onto pre-baked crust. Return to preheated oven 20 min. Tip: There is sugar free coconut out there, if you can find it.

I'm going to try this, but substitute chopped almonds for the pecans & maybe drizzle a little sugar free chocolate syrup on top - might taste like an Almond Joy? Yum!
