Quick Cilantro Pesto Fillets

  • Non-stick cooking spray

  • 1 cup packed Cilantro leaves

  • 3 garlic cloves

  • 2 T. fresh lemon juice

  • 1/4 t. salt

  • 1/8 t. ground red-pepper

  • 2 T. olive oil

  • 4 tilapia fillets (4oz. each)

  1. Preheat oven to 400 degrees. Coat a 9" x 13" baking dish with the non-stick cooking spray.

  2. In a food processor or blender, process the cilantro, garlic, lemon juice, salt and red pepper until the cilantro is well chopped, scrapping sides as needed. Slowly add the oil, then process until blended.

  3. Place the fish in the baking dish, and spread the pesto over the fish evenly.

  4. Bake for 10 - 12 minutes, or until fish flakes with a fork.

I don't believe this to be true. Tilipia is a light fish (actually has little or no flavor).

sounds delicious. I'd heard that tilapia had a high level of cholesterol and so wasn't so good for you. Do you know if that is true?
