non-stick cooking spray
1 graham cracker crushed or 2 Tbsp. graham cracker crumbs, divided
1 pkg. (4 serving size) lemon flavor sugar free gelatin
2/3 cup boiling water
1 cup lowfat cottage cheese
1 8oz. container of light cream cheese
2 cups cool whip lite topping
Sprinkle 1/2 of the crumbs onto sides of an 8 or 9 inch springform pan or a 9 inch pie plate that has been sprayed with cooking spray.
Completely dissolve gelatin in boiling water.
Pour into blender container.
Add cheeses; cover. Blend on medium speed until smooth.
Pour into a large bowl. Gently stir in whipped topping.
Pour into prepared pan; smooth on top.
Sprinkle remaining crumbs around edge.
Refrigerate 3 hours or until set.
Remove side of pan just before serving.
