Lemom Souffle cheesecake

Ingredients
  • non-stick cooking spray

  • 1 graham cracker crushed or 2 Tbsp. graham cracker crumbs, divided

  • 1 pkg. (4 serving size) lemon flavor sugar free gelatin

  • 2/3 cup boiling water

  • 1 cup lowfat cottage cheese

  • 1 8oz. container of light cream cheese

  • 2 cups cool whip lite topping

Directions
  1. Sprinkle 1/2 of the crumbs onto sides of an 8 or 9 inch springform pan or a 9 inch pie plate that has been sprayed with cooking spray.

  2. Completely dissolve gelatin in boiling water.

  3. Pour into blender container.

  4. Add cheeses; cover. Blend on medium speed until smooth.

  5. Pour into a large bowl. Gently stir in whipped topping.

  6. Pour into prepared pan; smooth on top.

  7. Sprinkle remaining crumbs around edge.

  8. Refrigerate 3 hours or until set.

  9. Remove side of pan just before serving.
