Healthy Peanut Butter Cookies

With only 5 grams of carbs per serving, you can't go wrong with these creamy peanut butter cookies.

Healthy Peanut Butter Cookies
  • 2 full graham crackers

  • 2 tbsp. peanut butter

  • 1 pkg. Sweetener (example: Splenda, Equal, Stevia)

  • 1 egg yolk

  • 1 tsp. milk

  • 1/2 tsp. baking powder

  1. Crush the graham crackers and blend with peanut butter.

  2. Dissolve packet of sweetener in 1 tablespoon of water. Add baking powder. Mix well.

  3. Add egg yolk and mix thoroughly.

  4. Add to graham and peanut butter mixture. Mix in the milk, and form balls.

  5. Place on a cookie sheet, press flat with a wet fork and bake at 350 degrees for 10 minutes.

Hi everyone, I am new to this site and I am hoping this will help me in preparing foods for my diabetic hubby! I was wondering if any of you know if bananas are bad for diabetics. I recently saw a recipe for ice cream that is just frozen bananas and peanut butter. Any help would be appreciated.

Not bad. Very crumbly. I'll try to make them again but use a little more milk to hold the dough together better.

I decided to use a teaspoon of table sugar instead of the artificial sweetener. That adds 16 calories and 4 carbs spread over 6 cookies. That makes each cookie have 6 carbs instead of 5. They were yummy. The dough is stickier than I expected, but I could flatten them. I didn't flatten them quite as much as the picture. But they look and taste like cookies. I appreciated that the recipe makes only 6 cookies. That's a good amount so we aren't tempted to eat too many of them or throw away the extras. I broke the graham crackers into a sandwich zip bag and crushed them with a rolling pin. I considered squishing everything inside the sandwich bag. I'll probably try that the next time.

I'm going to try these out while camping. The recipe is small so it looks like I can easily make these in my backpackers oven.

I make peanut butter cookies with just 1/4 cup Splenda, 1 egg and 1 cup peanut butter and everybody loves them! You bake for 12 mins and that's it

Sounds good but I have a short recipe for pNut butter cookies from way back and I 'm going to try it with Splenda. It's 1 cup PNut butter, 1 egg and 1 cup sugar. Mix it, form in balls…put on sprayed cookie sheet…criss cross each with fork dipped in sugar. If memory serves…bake 10 min at 350. ..or longer to brown a little.. Take out, let set before removing cookies to plate or they will fall apart. If they do, use them crumbled over fruit. :) notice? No flour.
