Macaroni and Tuna Salad

  • 8 oz uncooked macaroni noodles

  • 1/2 cup reduced fat mayonnaise

  • 1/2 cup fat-free sour cream

  • 2 tsp sugar

  • 2 tbsp cider vinegar

  • 1 tbsp prepared mustard

  • 1 1/2 cups chopped celery

  • 1/2 cup chopped onion

  • 1/3 cup chopped green bell pepper

  • 1 6oz can water packed tuna

  • 1 egg,boiled and chopped

  • 1/2 tsp. salt

  • 1/2 tsp pepper

  1. 1.cook the macaroni according to package directions (but without adding salt),drain thoroughly and rinse in cold water.

  2. 2.Combine the mayonnaise ,sour cream, sugar,vinegar,and mustard in a small bowl and mix well.

  3. Combine all ingredients in a large bowl and toss well.Chill before serving.

sounds yummy, I usually substitute bacon bit or real diced then fried bacon in place of the tuna fish.

i have also been using wheat pasta,nobody likes it ,but me,but your not suppose to have white the doctor says, it sounds great even with wheat,pinky

I also use wheat or whatever is brown. I remember the rule for diabetics,no white rice,potatoes etc. I just automatically load upn brown spaghetti etc.

Can't wait to try this. I have been using wheat noodles instead of white. I'm not sure of number values, but have heard the wheat is better for you.(?)
