Tofu and Broccoli Stir Fry

  • 3/4 cup of chicken broth, reduced sodium

  • 3 tbs spoons reduced sodium soy sauce

  • 3 Tbs cornstarch

  • stevia to taste

  • 1/4 tsp crushed red pepper

  • 1 14 oz pk of firm tofu

  • 2 Tbs of canola oil

  • 1 Tbs of minced fresh ginger

  • 2 cloves of crushed fresh garlic

  • 6 cups of broccoli florets

  • 3 Tbs of water

  1. 1.Combine broth , soy sauce, 1 Tbs of cornstarch, stevia, and crushed red pepper. Set Aside.

  2. Cut tofu into 3/4 inch cubes.pat dry and then toss with 2 Tbs of corn starch to coat. Heat 1 Tbs oil in a large nonstick skillet or wok over medium high heat. Add the tofu : cook undisturbed , until browned, about three minutes. Gently turn and cook. stirring occasionally, until browned all over. two to three more minutes. Transfer to plate.

  3. Reduce heat to medium, add the remaining 1 Tbs of oil, garlic and ginger, cook until fragrant, about 30 seconds. Add broccoli and water cover and cook , stirring once or twice until tender crisp, 2-3 minutes. Stir the reserved broth mixture and add to the pan. Cook until the sauce has thickened. 1-2 minutes. Return the tofu to the pan and toss to combine with broccoli and sauce. I served this over brown rice and it was delicous

I found this a light and delicious dinner and was very happy with it. Original recipe calls for sugar and salt but found it does not need this. The recipe was found on Lifescript. Next time I am going to try cooking spray versus the oil. When cooking one can do as they want. The fresh ginger and garlic really makes the dish yummy. Have fun with food.
