Karen's Chicken Stew

  • 1/2 cup whole wheat flour

  • 1 teaspoon salt

  • 1 teaspoon pepper

  • 6 skinless, boneless chicken breast halves, cut into bite-size pieces

  • 3 Tablespoons Olive Oil

  • 3 bacon slices, chopped

  • 1 Medium onion, chopped

  • 1/2 lb. mushrooms, cremini, sliced

  • 1 lb. potato, chopped into 1/2 inch pieces

  • 4 garlic cloves, minced

  • 1 teaspoon thyme, dried, or 1 tablespoon fresh, chopped

  • 1 bay leaf

  • 1-1/2 cup chicken broth

  • 1-1/2 cup white wine

  1. In container, combine the flour, salt and pepper. Add the chicken pieces and toss to coat.

  2. Saute chicken in olive oil in two batches, browning on all sides. Transfer to a slow cooker. Add the bacon, onion, mushrooms, potatoes, garlic, thyme, bar leaf and stock to the slow cooker and stir to combine.

  3. Deglaze saute pan with wine, simmering and scraping up any browned bits. Add to the slow cooker.

  4. Cover the slow cooker and cook for 5 hours on low. Remove bay leaf before serving.

How much chicken is in this recipe? In the stores in my area this is too vague. Six breasts can be anywhere from 2 pounds to 6 pounds.

This sounds good. I can smell it cooking ALL day and be really ready for dinner. Don't forget to add a dinner salad.
