Mixed Vegetables

  • 1 T Extra Virgin Olive Oil

  • 1 small shallot

  • 4 C frozen vegetables ( 1 C. Carrots, 1 C. Corn, 1C. Green Beans, 1C. Snow Peas)

  • 1/2 tsp dried dill or dried tarragon

  • 1/4 tsp salt substitue

  • 1/4 tsp ground pepper

  1. Heat Oil in large skillet (med, heat), add sliced shallot into skillet and cook stirring until softened, approximately 1 min.

  2. Add in vegetables and cover skillet and cook approx 5 minutes or until vegetables are tender.

  3. Add in dill or tarragon, salt and pepper. Let cook, stirring occasionally 2 minutes.

  4. 4, Serve and enjoy.

What's really great with this recipe is that you can slice up some boneless chicken breast or boneless pork chop and have a one skillet meal. Hope you try and enjoy!
