  • 1/2 cup quinoa

  • 2green onions, sliced

  • 2 roma tomatoes, diced

  • 1/4 cup diced cucumber

  • 1/3 cup lemon juice

  • 1/4 cup light olive oil or extra virgin

  • 1 cup chopped fresh curly parsley, finely chopped

  • 1 tbsp dried mint,

  • 1/2 tsp sea salt

  • 1/8 tsp black pepper

  1. boil quinoa in water for 5 min, drain and soak in ice water for 10 min.

  2. Drain, add other veggies and salt and pepper, slowly add lemon juice, then olive oil. Stir well and taste. More salt and pepper can be added to taste.
