Teco's Fried Diabetic Skillet Cream Corn

  • 6 ears fresh corn, shucked

  • 1 teaspoon of canola oil

  • 2 fluid ounces of evaporated canned skim milk

  • 8 fluid ounces of chicken broth (fat-free/low sodium)

  • ΒΌ teaspoon of garlic powder

  • 2 teaspoons of freshly ground black pepper

  1. In a large bowl, remove corn from cobs by using knife. Add salt, black pepper, garlic powder, chicken broth and milk to corn mixture and mix well with hand. Add canola oil in a large skillet or pot and allow it to heat-up. Over medium-high heat, pour in the corn mixture. Lower the temperature and simmer until corn is done, about 20-30 minutes, stirring ever occasionally to keep corn from sticking to skillet or pot.
