Murry's Latkes

  • Latkes

  • 1 med. zucchini , grated

  • 1 small yellow onion, grated

  • 1 med. sweet potato, grated

  • 2 tbsp. whole wheat flour , sifted

  • 2 tbsp. paprika

  • 2 eggs , beaten

  • dash of salt and pepper (to taste)

  • 1 oz butter (for frying)

  • Whipped mustard topping

  • 1 cup heavy cream

  • 2 tbsp. Stone ground mustard

  • pinch of salt

  1. Add beaten eggs to zucchini, onions, sweet potato, salt, pepper, and paprika.

  2. Add flour last and beat with a fork until batter is formed. If the batter is too thin add flour a tbsp at a time to get desired consistency.

  3. Heat teaspoon of butter in saute pan over medium-high heat. Drop 4 oz of pancake batter into saute pan. Cook until crispy, flip and do same on other side.

  4. make the whip cream topping by whipping the cream until stiff, then fold in the mustard. Salt to taste. (it doesn't take very much salt!) I use more mustard when cooking for myself but you'll want to experiment with the taste to see how spicy you like it.

I would say that I am looking forward to trying this, however, during this past Chanukah I kind of did try it, in that I was a bit low on zucchini, so I added in a healthy portion of grated sweet potato to a similar recipe for latkes and the resultant product was quite fabulous! I don't know about the whipped mustard topping - not that fond of mustard - but the rest is wonderful! Thanks for passing on your version! I like a zucchini version of latkes far better than a typical potato version any day!
