Easy Chicken Stroganoff

  • 1lb Diced Chicken Breast

  • 8oz Sour Cream (fat free, light or full fat)

  • 8oz Sliced Mushrooms

  • 1 Diced Medium Onion

  • 1 Tablespoon flour

  • 1/2 cup Chicken stock

  • 1/2 cup milk (any type)

  • Salt and Pepper to taste

  • Optional

  • 1 Teaspoon of Dijon Mustard

  1. Fry the onion and mushrooms until soft and remove from the pan

  2. Fry the chicken until cooked

  3. Add the onions, mushrooms, milk and chicken stock and heat for a few minutes. Add optional mustard.

  4. Add the flour and mix in until it's not lumpy

  5. Season and cook for a few minutes

  6. Add in the sour cream and mix until smooth

  7. Cook until it's the thickness you want it to be

  8. Serve with noodles, salad or any other dish you like.

You can use whatever you want to fry the onion, mushroom and chicken. I use olive or safflower oil.
