Sugar Free Oatmeal Cake

Ingredients
  • Cake:

  • 1 Cup Quick Oats

  • 1 Stick Margarine (melted)

  • 1 1/3 Cup Boiling Water

  • Mix together and let set at least 20 min.

  • ADD:

  • 1 Cup Splenda (1 cup regular sugar)

  • 1 Cup Brown Sugar Splenda (2 cups regular brown sugar)

  • 2 Eggs

  • 1 ½ Cup Flour

  • 1 ½ tsp. Cinnamon

  • 1 tsp. Baking Soda

  • 1 tsp. Vanilla

  • Topping:

  • ½ Cup Brown Sugar Splenda (1 cup regular brown sugar)

  • ¼ Cup Evaporated Skim Milk

  • 1 Cup Pecan Pieces

  • 1 Cup Coconut (unsugared if possible)

  • 6 Tbs. Margarine (melted)

Directions
  1. Cake:

  2. Mix with oat mixture. Pour in to a 7 x 11 greased/floured pan. Bake at 350 degrees for 25-30 minutes.

  3. Topping:

  4. Mix together and spread on cake while it is still warm. Place under the broiler for a few minutes until golden brown. Watch closely, because it will burn quickly and easily.
